Shiraz 2008

Growing on the highest slopes of the farm in a combination of granite and clay/loam soils the vigorous growing Shiraz vine gets a nice break. Due to the wind and heath our vines don’t grow themselves to death as others would do in the lower lying parts of the valley. This intensifies the grapes into very concentrated, close to raisins, bunches.

The grapes are picked full ripe, only when they look like old men’s faces the team is allowed to pick the grapes.

The destemmed grapes end up in open fermenters and punched at least every 3 hours in the beginning. After a 24 hrs cold soak we ad the yeast, mainly New World (Australian) strains are used for this wine.

Again, after alcoholic fermentation the wine is put via the press into stainless steel for Malolactic fermentation.

The best tanks are selected pumped into 225 lt barrels, a combination of 65 % French and 35 % American oak. Here they are left for up to 14 months and again the best ones are selected for the bottle.

Mooi Bly’s Shiraz is still young but not green, full ripe tannins and intensive dark ruby colour.

On the nose you’ll discover: plums, dried fruits and a hint of cigar box. On the palate again the full ripe dark prunes, roasted coffee beans and mocha. A lingering aftertaste, with fresh acidity.

This wine is still young and has some ageing potential, although it is drinkable young.

Shiraz 2007

Shiraz grapes had analyses of 26 degrees balling and an acidity of 6.5 g/l at picking date. The block used for this wine lies at the complete top of the farm in deep clay loam soils. The production is only 6.5 tons per hectare to get that full ripeness in the berries. At picking date these grapes look nearly like raisins.

As with the Cabernet these grapes went through a cold soak and an intensive working during fermentation. The final wine is 70 % wooded for 14 months in both French and American barrels.

This wine has the typical spiciness of the Shiraz grape, mocha aromas and ripe dark berries on the pallet. Although very young it is already drinkable, but a little aging will soften the tannins of this Shiraz.
