Tannat 2007

As Tannat is a very vigorous grower, only the top quality bunches ended up in the cellar. After destemming the complete mash was pumped in the open fermentation tank and kept cold for 2 days. Whilst punching in this period we extracted maximum colour and flavour. The fermentation took 2 weeks and the wine was only punched by hand. After the fermentation the fresh Tannat went into small, 225 lt oak barrels, 75 % French and 25 % American, for ageing 14 months. June 2008 the wine was bottled and kept in the cellar for another year.

This maiden Tannat has a deep ruby colour, that shows a lot ageing of potential. The nose is rather complex with pine, coffee a warm welcoming smell. The palate is as complex: full and soft perfectly balanced in fruit to wood. The same flavours as on the nose come back in the taste, warm spiciness like mocha and dark prunes.

This wine is still young, but has a lot of ageing potential. Due to it's scarceness a rather unique wine.
